Homemade salsa...

One thing I have enjoyed about being here in Malawi, is that I've learned to make things from scratch that I never would have even tried in the states because it's so easily available. One of those things was Homemade salsa. I've included the recipe below and hope to include more recipes soon.
 
Homemade Salsa
 
 
3 onions - diced
4 cloves garlic - crushed
4 sm green peppers - diced
6 small tomatoes - diced
1 tsp. salt
1-3 tsps. Peri-Peri or Cayenne (depending on how hot you like things)
2 tsps. fresh cilantro crushed
 
Cook onions, garlic and green peppers in about 1 TBSP oil until clearish but not fully browned. Add the diced tomatoes, salt, Peri-Peri (or cayenne) and cilantro. Simmer for 30 minutes over med low heat. Place in a container in the fridge and use as needed.
